Relaxing Reishi Brownies

These delicious reishi brownies give you that double hit of chill with the comfort of a classic baked good and the medicinal benefits from reishi mushrooms!

Ingredients

  • 1/3 cup coconut oil or grass-fed butter (melted, but not hot)

  • 2 eggs

  • 3 tbsp water

  • 1 cup almond flour/meal (fine)

  • 1/3 cup cocoa powder, unsweetened

  • 1 tsp baking soda

  • 2 tbsp reishi powder (can be found at most health food stores, or you can purchase it online here and receive 10% off your order)

  • 1/2 tsp salt

  • 1 tsp vanilla extract, pure

  • 2/3 cup coconut sugar (substitute with allulose for low-carb)

  • 1/3 cup dark chocolate chips (optional)

  • 1/3 cup pecans or walnuts, chopped (optional)


Directions

  1. Preheat oven to 375ºF (191ºC) and grease a medium-size pan.

  2. Melt coconut oil or butter. Let cool slightly.

  3. In a medium or large-sized mixing bowl, combine the melted coconut oil/butter, egg, sugar, and vanilla extract. Mix well.

  4. Mix dry ingredients together: flour, cocoa powder, baking soda, reishi powder, and salt.

  5. Slowly combine the dry ingredients with the wet ingredients and mix well. Fold in the chocolate chips and nuts until add-ins are thoroughly coated. The mixture will be quite thick.

  6. Pour and scrape the batter into the pan and smooth out. Bake for 20 – 25 minutes, or until the top has a crust. A toothpick should come out clean.

  7. Let cool 10 – 15 minutes, cut into squares, and enjoy!
